PRODUCTION AREA:
San Bonifacio area, highly suited to Arcole D.O.C.,
characterized by a soil of volcanic origin, primarily
clayey.
HARVEST:
Hand-picked exclusively in early/mid-September.
TECHNIQUE:
After soft pressing, the must is left to ferment
with the skins for approximately 10 days in stainless steel tanks, at a
controlled temperature of 20 - 24° C.
Maturation initially takes place in steel tanks, followed by
a period of approximately 12 months in French oak barrels,
and a final 6 months resting in the bottle.
ORGANOLEPTIC CHARACTERISTICS:
Dry wine with an intense ruby red color, tending towards garnet.
Pleasant aromas of vanilla and violet are complemented by intense
and characteristic notes of wild plums, blueberry, cherry,
raspberries, and a slight hint of green pepper and hydrocarbons.
On the palate, it is dry, full-bodied, and of considerable structure.
FOOD PAIRINGS:
Pairs well with grilled meats, roasts, particularly important
red meats (such as "Fiorentina" steak), and aged cheeses.
