Organoleptic description

Color: intense ruby red.
Aroma: decisive, with notes of sour cherry, bitter almond and leather.
Taste: round, structured, with soft tannins and excellent persistence.

Vinification

Drying: short, on the vine.
Fermentation: spontaneous, with indigenous yeasts, in steel tanks for 12 days.
Aging: 16 months in Tonneaux.
Bottle refinement: 4 months.
